Instructions:
- Prepare the bread:
- Tear the bread into smaller pieces or cubes and set aside. If using very stale bread, you can lightly toast the pieces in the oven for a few minutes to firm them up.
- Prepare the cherry filling:
- If using fresh cherries, wash and pit them. If using jarred cherries, drain them well.
- In a small saucepan, heat the cherries with a bit of the sugar and a splash of water (about 2-3 tbsp) to make a light syrup, simmering for 5-7 minutes. This step is optional but enhances the flavor of the cherries.
- Make the custard mixture:
- In a large bowl, whisk together the eggs, milk, sugar, vanilla extract, cinnamon (if using), and a pinch of salt.
- Assemble the bread pudding:
- Preheat your oven to 350°F (175°C).
