For the Dough:

  • 170ml warm water
  • 1 tsp active dry yeast (3g)
  • 1 tbsp white sugar (12g)
  • 1/4 tsp salt (1.5g)
  • 250g all-purpose or bread flour

For the Filling:

  • 1/4 cup flour (35g)
  • 1/2 tsp salt (3g)
  • 1/4 tsp black pepper (0.58g)
  • 2 tbsp olive oil (30g)
  • 3 green onions (30g), finely chopped
  • A pinch of baking soda (optional)

For Cooking:

  • Olive oil (for brushing)

Directions:

  1. Prepare the Dough:
    • In a bowl, mix 170ml of warm water with 1 tsp active dry yeast and 1 tbsp white sugar. Let it sit for a few minutes until the yeast is activated and foamy.
    • Add 250g of all-purpose flour and 1.5g (1/4 tsp) salt to the yeast mixture.
    • Mix well until a dough forms.
    • Cover the dough and let it rise until it doubles in size, about 1.5 hours.
  2. Prepare the Filling:
    • In a separate bowl, mix 35g (1/4 cup) of all-purpose flour, 3g (1/2 tsp) of salt, and 0.58g (1/4 tsp) of black pepper.
    • Add 30g (2 tbsp) of olive oil and mix well.
    • Add 30g of finely chopped green onions and a pinch of baking soda (optional) to the mixture. Mix thoroughly.
  3. Roll Out the Dough:
    • After the dough has risen, punch it down and roll it out into a 25×35 cm rectangle.
    • Spread the filling mixture evenly over the rolled-out dough.
    • Roll up the dough tightly from one end to the other.
  4. Shape the Rolls:
    • Divide the rolled dough into 6 equal parts.
    • Take each piece and pinch the ends together to form a round shape.
  5. Cook the Bread:
    • Heat a pan over medium heat and add a little olive oil.
    • Place the rolled dough pieces in the pan.
    • Brush the tops with olive oil.
    • Cook until both sides are golden brown, flipping once to ensure even cooking.
