Seared Steak with Creamy Herb Sauce & Roasted Cherry Tomatoes

1/4 cup sour cream
2 tablespoons chopped fresh parsley
1 clove garlic, minced
1 tablespoon lemon juice
1 teaspoon Dijon mustard
1/4 teaspoon salt
1/4 teaspoon black pepper
Instructions:

  1. Prepare the Roasted Tomatoes:
    Preheat your oven to 400°F (200°C).
    In a bowl, toss the cherry tomatoes with 1 tablespoon of olive oil, minced garlic, dried oregano, salt, and pepper until well coated.
    Spread the tomatoes on a baking sheet in a single layer and roast in the preheated oven for about 15-20 minutes, or until they are blistered and softened.
